AP Flour: 250g
Baking powder: 1 1/2t
Baking soda: 1/2t
salt: 3/4t
butter: 1 stick (113g)
brown sugar: 100g (1/2c packed)
molasses: 40g (2T)
eggs: 2
milk: 240g (1c)
vanilla: 2t
chopped toasted pecans: 100g
Spices:
Cinnamon: 2t
ground ginger: 1 1/2t
nutmeg: 3/4t
allspice: 1/2t
cloves: 1/4t
black pepper: 1/4t
Mix spices together.
Oven at 350 degrees.
Melt butter so it is liquid and foaming. Take off heat. Add the spices, and whisk for 30 seconds. Yum.
In a medium sized bowl, add brown sugar, molasses, and butter. Stir until smooth. Then stir in the eggs, and whisk away as you add the milk, and vanilla. Yum.
In a large bowl, mix flour, powder, soda, and salt. Add pecans. Yum.
Grease a 9x9 pan.
Hopefully your oven is now hot enough.
Add the wet to the dry and mix until there is no raw flour showing. Pour into the pan. Sprinkle cinnamon sugar over the top. Then bake for 40 minutes.
Yum.
I am going to add rum to it next time.

Refined avocado oil, yes, not virgin. Heat oil to about 200 degrees, roughly the same temp as melted butter, and add the spices.
Whole wheat pastry flour. 250g, but increase milk to 270g.
Be extra careful that your flour isn't too old.
