I think you definitely want at least one off-premise copy. I used to put backups in a safe deposit box.  But I’m too lazy for that.

You can use rclone to sync daily for any new of modified large files to BLOBs/S3/cold storage.

For live documents you can sync real-time using Google Drive, One Drive for desktop/documents, Dropbox, or Mega for ad-hoc folders.

The once a year is my fourth copy of data.

1. Live machine with documents synched to OneDrive
2. Backup of live machine weekly
3. Backup of weekly backup quarterly from backup server to NAS
4. Backup of quarterly backup yearly from NAS to Azure

I have 20 or so machines that fall under this plan.

.002 per GB per month.

No reason to encrypt it.

It’s encrypted in transit. And it’s encrypted at rest on Azure.
