So, the filtering took a long time. Much longer than I anticipated. About 21 hours. I did fine mesh metal strainer, 120 mesh filter, 200 mesh filter, 400 mesh filter, and then it still took 4 passes through the Chemex. The batch yielded 280ml of infusion.

Then I mixed 84ml of water and 12.6g of gum arabic. Stirred for about 30 minutes with the magnetic stirrer. Then I added 112g of brown sugar to the gum mixture. Stirred this with the magnetic stirrer also for about 30 minutes. Then I added the cacao infusion to the gum / sugar / water mix and stirred that for an hour at 1250 RPM in a 1000ml beaker.

The final yield was, interestingly enough, 420ml. I had started with 420ml of rum, to which I added the vanilla, cacao nibs, and cacao butter. I was surprised the final liquid volume matched the original liquid volume.

The buttered rum came out at 720ml so I added 30ml of straight rum back to it to get me to an even 750ml.

After doing some reading and some math, I have the ABV as follows:

- Buttered rum, 41.6%
- Cacao liqueur, 27.3%
- Angostura Orange Bitters, 28%

Our final batch build:

- 750ml of buttered rum
- 250ml of cacao liqueur
- 40ml of orange bitters
- 5ml of 20% saline

Final pre-dilution ABV: 37.46%

I still need to figure out the dilution. The Dave Arnold calculator for stirred drinks with an ABV of 37.46% suggests a dilution of 44.2% (461.9ml). This would give a final ABV of 25.98%. Tomorrow I will actually mix one and see what the actual real world dilution is. I suspect it will be lower (higher ABV) and then I will probably split the difference.

Okay. Now working on the cookies. I decided to abandon using the cacao butter left over from the cacao liqueur since the recipe called for softened butter and even though I have had the cacao butter out for several hours it was still hard like Gruyere cheese.

I am not enough of an experienced baker to figure this out and / or risk it with the cacao butter.

So I pulled out some unsalted European butter just now and cut it into slices so hopefully it comes to room temperature I’m not too long. All the other ingredients are measured and ready so all I need to do is mix everything once the butter is at temp. Then the dough will rest in the fridge overnight. And I will bake them tomorrow.

You can’t control the salt content of salted butter is my understanding. Or, at least that is why I always prefer unsalted butter.
