You have two options:
1) Windows will install updates automatically and you can choose when you want to reboot (no forced reboots).
2) You can totally disable automatic updates, and you can choose when to install them and when to reboot.
For #1: Under Legacy Policies, set this value to Enabled:

For #2: Under Managed end user experience, set this value to Disabled:

Note that for each policy item the item will be self-documenting so you can see what each policy does when it is Enabled, Disabled, or Not configured. For policies that have additional settings beyond those three the documentation will state what each setting does. There are many other policies that you can experiment with to alter the behavior of Windows Update to suit your preferences.

Policy is not applied immediately. It refreshes once an hour by default.
To force an update, open a command prompt and issue this command:

If you have only changed policy under the "Computer Configuration" node as opposed to the "User Configuration" node then you can hit N for the OK to log off question.

SamplesBoiI did the first and did the gpupdate from the command line, not powershell. The return was less verbose than yours:
C:\Users\samplesboi>gpupdate /force
Updating policy...
Computer Policy update has completed successfully.
User Policy update has completed successfully.

Operator error. I use these settings on machines I only update twice a year. They work.
