Youtube ended up recommending these food videos that are just idiotic

The first was about flour, the second was about butter. The butter one was especially obnoxious, I will debunk that one later.

I'm not going to post them, because they are misinformation.

First, on flour. When you are looking at white flour, there are many types and grades of flour, and not all of this has to be
labeled. Its especially important to realize that bleaching agents are considered processing aids, and thus do not appear
on the label.

However, enrichment, which is adding nutrients, does appear on the label, as well as maturation agents, and malted barley flour.


Flour is generally:

milled, with different wheat products separated

recombined to produce a consistent product (protein, and ash percentage).

treated for color (aged, or bleached with chlorine dioxide (bread flour), chlorine gas (cake flour), benzoyl peroxide (all purpose)

Whitening ingredients are banned in the EU, EU recipes always assume unbleached.

Before 1949, US flour was bleached with an agent that caused seizures in dogs. It was banned when this was discovered and has not been used since.

Finally, flour is treated for age. The reason a mill would do this is to be able to ship product faster. These maturation agents
are present on the label. They are:

Azodicarbonamide
Ascorbic acid (allowed in the EU, not controversial)
Calcium peroxide

Note that some items that bleach also mature, like Acetone peroxides, chlorine dioxide, and the others named above. But these substances,
even though they sound scary, aren't in the final product. However, they will have a residual effect.


Okay, why add malted barely flour? It causes enzyme activity that produces moist bread. Its a baking cheater step. You can also buy it -- diastatic malt powder, and add it to your flour.


Finally, there is no requirement to treat flour. After recombining through the roller mill, you put it in the warehouse for 2 weeks, package it up, and you have unbleached, untreated flour.

Finally, all flour contains rodent hairs and insect parts. In 50g of flour there must be fewer than 75 insect parts and 1 rodent hair.

Eat healthy.

I've been using around 5% diastatic malt powder in rustic bread for 15 years.  Look for the protein content in your flour.

Its often on the label, but if not the mill will provide a spec sheet for the products involved.

Right now I am using King Arthur organic. Protein content: 12.7%. Ash content: 0.55%.

I am switching to Central Milling High Mountain. Protein content: 13.5%. Ash content: 0.60%

CM flour has no treatment, it is prized in SF for sourdough and artesian breads. You can buy it online
15lb for $26 but shipping will get you.

hmmm - I can make a dozen 1Kg loaves (hydration included) at that price.  I'll write it down for future use.  Have you played around with the effects of scoring and shaping?
