My delicious cheese is done!!!
I opened it this morning.
5+ lb of what I had wanted to be Gruyere, but it turned out to be Suisse!!! It developed eyes, though not round ones. It tastes like creamy deli swiss!

I'll post some pics but this has a nice strong taste! And its not very salty either.
