The challenge you are facing is that most headphones are a set of tradeoffs. I am talking passive headphones for listening to music. You will trade something off between any two pairs. Now add on a mic. More tradeoffs. Now add on Bluetooth. More tradeoffs. Now add on noise cancelling. More tradeoffs. You need to decide where you want to sacrifice. And if you don't want to sacrifice then you need to look at two devices. One for listening. One for talking. And you may need a device to bring those two signals together for the best experience. You don't need wired or a boom. Just your phone. The noise canceling headphones have built in mics for answering calls.

The $20 Logitech usb gaming headsets work ok.

After that you're looking at a trained parrot or  a howler monkey.
