Today I am making Turkish Delight.

Basic procedure:

Cook sugar syrup to 240 degrees.

Put cornstarch, some citric acid, and some cream of tartar and heat and whisk until you have vasaline.

slowly pour the sugar mixture in, whisking all the way.

Then turn heat to medium and stir for about 45 minutes. The mixture will turn clear.

Then turn off heat, and flavoring (I have cinnamon oil) and food coloring (red dye #2).

Pour into a 9x9 pan that has been lined with foil and sprayed with non-stick spray, put into fridge...and oh yeah!

Cut and dust with powdered sugar and maybe a little cornstarch mixed in.
