Speaking from experience (I had a trans professor at University) it makes things far easier if the person in question makes it clear which pronouns to use.  If they give you this information you ought to be thankful for it.  This is even more of an issue with online courses where you never actually see even a photo of them and when they have a doctorate (so no Mr or Mrs).  The pronouns really help!!

Well they were just an adjunct professor so they probably got only $3,000 or so for teaching the course.  The pay for adjuncts is surprisingly low.

I agree with the OP. And the right pronouns match a person or groups gender and plurality - his, her, their. There are no more genders or numbers than thousands of years ago so no new pronouns are required.
