The first is that the humidity and reliability of my aging space isn't good for aging more than about 3 months and I would like to age for 12 months or more.
The second is related to the first, too much mold other than what I want grows in my cheese cave. Oh, its all non-toxic, I am not worried about killing anyone,
I just want the cheese consistent.
So I am starting a project to upgrade my aging space.
To upgrade the humidity control, I am going to use an Inkbird IHC-200:

Then, to increase humidity when needed, I am going to use a single disk humidifier:

I am going to get some fans and other items to help move air better, cheese ages a lot better with airflow.
And finally, I am going to get a small HEPA filter to try and keep that unwanted mold out.

Tom LeykisOR, you could just follow everyone else there and just move to IDAHO. High desert, low humidity, plenty of water, plus GARDENING SPACE!!!!! You could make your own cheese cave.
I look at what you do with cheese, and can just imagine what you could with a garden full of vegetables (and peppers)!!!
