What’s your favorite easy “go to” meal for a weeknight?

I am looking for suggestions.

Baked chicken thighs only take 45 minutes and dirty one pan. Not sure if you think that is easy. Serve with steamed frozen or fresh veggies (broccoli, etc).

Baked salmon in the oven is similar and only takes 15 minutes. Similar veggie side.

For more instant meals, I like to take a package of Knorr Alfredo and cook as directed, then about 5 minutes from the end, I add a cup of frozen peas and when it is done I mix a can of tuna in. Tuna noodle with peas.

Diced beef with vegetables and pasta sauce.

High quality diced beef
Diced vegetables, peppers, mushrooms, broccoli thinly sliced carrot
Jar of pasta sauce

Quickly fry beef in Worcestershire sauce
Cook some pasta
Steam veggies
Heat pasta sauce separately

Combine everything when cooked.

I’m on a cycle of white chicken chili, until I get sick of it shrug

Just dump some raw uncut chicken breast into a big pot with chicken broth, onions, garlic, multiple cans of white beans, cans of green chilis, chili powder etc.
Cook the shyt out of it (either crock pot or just stovetop)
When done shred the chicken up & add a shytload of cream cheese, stir together.

Everybody loves it like they’ve gone to heaven lol

This will be a hit with everyone everywhere, and will win so-called banal chili cook off “contests” every time.
The reason is the cream cheese fatbanana is heroin, fatbanana doesn’t realize the combination of cream cheese & salt hypnotizes them like a Big Mac. They never see it coming because of the buzzwords “chicken breast” and “white beans” give them the false illusion of angelic healthy alternative goodness, they get to feel virtuous and daring and heart-healthy and edgy, willing to change their preconceived notion of chili being red and beefy. As usual they hold their nose and “try it” for social media likes (expecting to hate it & spit it out after the selfie, already deciding the hippie fake white bean & chicken version is a piss poor version of the real deal meant for nursing homes. They do not know that the excessive blocks of cream cheese that melt in and make the dish look vaguely beige (they just thing it’s from beans) basically turn the dish into liquid cheesecake impossible to resist. The reptile brain takes over, demands 2nd & 3rd helpings of this crack, in a way regular chili can’t ever compete with because it isn’t liquid cheesecake.

Yea I just had 4 bowls for breakfast in a frenzy.

It’s kinda like (or exactly like) fine restaurant mashed potatoes, tasting divine and encouraged as the perfect fall comfort food, better than anything at home or elsewhere by far. The chefs all know the secret, and it isn’t cuz of organic hand dug special potatoes from Brazil. The “secret” comes down to a mix of 50% potatoes + 50% butter recipe + salt. Doesn’t have to be sea salt & heritage organic butter, any Costco cheapi ingredients will be fine. Everybody walks away happy.

The "cycle" is pretty critical and often not considered. I try to include mostly fiber and protein, and minimize carbs - but thinking you can eat the same thing every day is a point of failure. You have to come up with an alternatives cycle.

I'm going to be like Rocky and drink raw eggs every morning after doing 200 pull-ups

A good start.   For your chicken, be sure to marinate with WOODY'S before cooking.   The cooking heat infuses the taste INTO your food for that delicious, all-American taste!!!

That doesn't sound bad other than broccoli is fuqing disgusting.

What in the hell is "diced beef" though? The meat I have seen in the store that is sort of "diced" is cubed meat for stew. That is disgusting.

Sounds good other than shredding chicken is hard work. So is dicing onions and garlic. But I could probably figure something like this out as I do like all kinds of chili. Good inspiration!

For home prepped meals, I pre cook pasta, or rice, potatoes and vegetables, and add a protein later.
